This recipe is from on of my daughter in laws relatives from Canada......this is one of their family favorites

Ingredients
  • 2 bunches spinach
  • salt and pepper to taste
  • 2 eggs, beaten
  • 1 teaspon dried dill
  • 1/4 pound butter
  • 1/2 cup bread crumbs
  • 1 1/2 cups diced onions
  • 1/2 cup mushrooms, diced
  • 1/2 pound feta cheese crumbled
  • generous pinch nutmeg
  • 12 sheets phyllo dough

Directions
  1. Wash, stem and steam spinach until wilted; chop.
  2. Saute onions, mushrooms, salt and pepper until liquid has evaporated (about 5 minutes.)
  3. Add to spinach.
  4. Add eggs, cheese, bread crumbs, dill and spices.
  5. Follow package directions for keeping phyllo moist.
  6. Brush each sheet with butter, layering 4 sheets on top of each other.
  7. Put filling along length of top layer, leaving 1 inch margin at each edge.
  8. Seal by folding and rolling up like a jelly roll.
  9. Brush tops with butter and bake at 425 degrees for 20 minutes.
  10. Cool 10 minutes.
  11. Slice and serve.
  12. Makes 3 rolls.

I do love spanikopita (I like spinach, and adding feta only makes it even better!)...this sounds very tasty.


I always wondered how difficult this was to make, this sounds reasonable - good post.


I went to a Greek festival this weekend. There were authentic crafts and Wonderful food.
