Italian Turkey Roll With Provolone And Spinach Recipe
My twist on a classic meatloaf. It pairs moist turkey with flavorful provolone and basil. One of our faves. ANd the leftovers are even better.

Ingredients
  • 2lbs ground turkey
  • 1 egg
  • 1 cup bread crumbs
  • 2 cups shredded good quality provolone
  • package frozen spinach
  • 1/3 cup chopped basil
  • 1/2 cup minced sweet onion
  • several drops soy sauce, about 3 tbsps
  • 3-4 cloves of garllic, minced
  • salt and pepper

Directions
  1. Preheat oven to 375
  2. Mix together ground turkey with egg, breadcrumbs, basil, onion, soy sauce, garlic and salt and pepper (easy on the salt)
  3. Work meat until all ingredients are incorporated.
  4. Take a large piece of wax paper or saran wrap and lay meat mixture onto it.
  5. Press meat flat so that it is long and wide enough to stuff and roll up.
  6. Put defrosted, drained spinach (ring out the spinach to remove all the moisture) and provolone onto the flattened meat.
  7. Roll it up using the paper to help you and seal the ends.
  8. Carefully transfer to baking sheet seam side down.
  9. Bake covered for the first 30 minutes and bake uncover the remining time.
  10. Let rest for a few minutes before cutting.
