Apricot Oatmeal Bars

- 1/2 cup shortening shopping list
- 3/4 cup firmly packed light brown sugar shopping list
- 1 tablespoon milk shopping list
- 1 teaspoon vanilla extract shopping list
- 1/2 teaspoon salt shopping list
- 1 cup all purpose flour shopping list
- 1 cup quick cooking rolled oats shopping list
- 3/4 cup apricot preserves shopping list
How to make it
- Preheat oven to 375.
- Beat shortening and brown sugar using electric mixer for 5 minutes.
- Add milk, vanilla and salt then beat until light.
- Add flour and oats to shortening mixture and combine.
- Set aside 1 cup of the crumbs for topping.
- Pat remaining crumb mixture into bottom of rectangular baking pan.
- Spread preserves over crumb crust to within 1/2" of edge of pan.
- Sprinkle reserved crumb mixture over preserves.
- Bake at 375 for 25 minutes.
- Cool completely on wire rack then cut into bars.
