Apple-Topped Chops

- 8 thin sliced boneless pork chops (2 per person) shopping list
- 3-4 (depends on size) red apples, such as Red Delicious or Gala shopping list
- 1/2 small red onion shopping list
- 2 Tbs. balsamic vinegar shopping list
- 4 Tbs. brandy shopping list
- 2 cloves garlic, minced shopping list
- salt and pepper to taste shopping list
- grainy mustard, such as Grey Poupon Country Di'jon shopping list
How to make it
- In a medium bowl, mix the brandy and the vinegar.
- Core the apples and chop them into small, bite size pieces. Leave the skin on.
- Slice the onion in 1/4 in. slices, running from stem to root.
- Add apples, onion and garlic to the brandy mixture and stir to coat well.
- Heat a large skillet over medium-high heat.
- Brown the pork chops in a little oil for 3 min. on the first side.
- Turn the pork chops over. Add everything from the mixing bowl and salt and pepper.
- Cover and cook until pork chops are cooked through and apples are tender.
- Serve with about 2 tsp. mustard per person. Trust me, I didn't think the mustard would work, but it makes the dish.
