Apple-Topped Chops Recipe
This is a recipe that I adapted from an Abs-Diet recipe in a recent Men's Health. It is really easy and has a nice mix of flavors.

Ingredients
  • 8 thin sliced boneless pork chops (2 per person)
  • 3-4 (depends on size) red apples, such as Red Delicious or Gala
  • 1/2 small red onion
  • 2 Tbs. balsamic vinegar
  • 4 Tbs. brandy
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grainy mustard, such as Grey Poupon Country Di'jon

Directions
  1. In a medium bowl, mix the brandy and the vinegar.
  2. Core the apples and chop them into small, bite size pieces. Leave the skin on.
  3. Slice the onion in 1/4 in. slices, running from stem to root.
  4. Add apples, onion and garlic to the brandy mixture and stir to coat well.
  5. Heat a large skillet over medium-high heat.
  6. Brown the pork chops in a little oil for 3 min. on the first side.
  7. Turn the pork chops over. Add everything from the mixing bowl and salt and pepper.
  8. Cover and cook until pork chops are cooked through and apples are tender.
  9. Serve with about 2 tsp. mustard per person. Trust me, I didn't think the mustard would work, but it makes the dish.
