How to make it

  • In a medium bowl, mix the brandy and the vinegar.
  • Core the apples and chop them into small, bite size pieces. Leave the skin on.
  • Slice the onion in 1/4 in. slices, running from stem to root.
  • Add apples, onion and garlic to the brandy mixture and stir to coat well.
  • Heat a large skillet over medium-high heat.
  • Brown the pork chops in a little oil for 3 min. on the first side.
  • Turn the pork chops over. Add everything from the mixing bowl and salt and pepper.
  • Cover and cook until pork chops are cooked through and apples are tender.
  • Serve with about 2 tsp. mustard per person. Trust me, I didn't think the mustard would work, but it makes the dish.
