How to make it

  • Butter 9-inch glass pie plate
  • In bowl, sift together sugar and cream of tartar
  • Beat egg whites until stiff
  • Gradually add sifted mixture, beating until smooth, and glossy
  • Pour into glass pie plate
  • Bake at 275 for 1 hour or until crisp to touch
  • Cool thoroughly before adding filling
  • In bowl, beat egg yolks until thick and lemon colored
  • Add sugar, beat well
  • Stir in lemon juice, and rind
  • Pour into double boiler, cook until thick, stirring constantly
  • Remove from heat and cool ( I pour into bowl to cool)
  • Whip cream and fold into *cooled* filling
  • Garnish with lemon slices
  • Pour filling into meringue shell
  • Cover with aluminum foil and refrigerate until ready to serve
