Upside Down Lemon Meringue

- 1/2 cup sugar shopping list
- 1/8 teaspoon cream of tartar shopping list
- 2 egg whites at room temperature shopping list
- 4 egg yolks shopping list
- 1/2 cup sugar shopping list
- 1/4 cup fresh lemon juice shopping list
- Grated rind of one lemon shopping list
- 1 cup whipping cream shopping list
- lemon slices shopping list
How to make it
- Butter 9-inch glass pie plate
- In bowl, sift together sugar and cream of tartar
- Beat egg whites until stiff
- Gradually add sifted mixture, beating until smooth, and glossy
- Pour into glass pie plate
- Bake at 275 for 1 hour or until crisp to touch
- Cool thoroughly before adding filling
- In bowl, beat egg yolks until thick and lemon colored
- Add sugar, beat well
- Stir in lemon juice, and rind
- Pour into double boiler, cook until thick, stirring constantly
- Remove from heat and cool ( I pour into bowl to cool)
- Whip cream and fold into *cooled* filling
- Garnish with lemon slices
- Pour filling into meringue shell
- Cover with aluminum foil and refrigerate until ready to serve
