EASY Delicious lemon pie! It is heavenly, actually!

Ingredients
  • 1/2 cup sugar
  • 1/8 teaspoon cream of tartar
  • 2 egg whites at room temperature
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/4 cup fresh lemon juice
  • Grated rind of one lemon
  • 1 cup whipping cream
  • Lemon slices

Directions
  1. Butter 9-inch glass pie plate
  2. In bowl, sift together sugar and cream of tartar
  3. Beat egg whites until stiff
  4. Gradually add sifted mixture, beating until smooth, and glossy
  5. Pour into glass pie plate
  6. Bake at 275 for 1 hour or until crisp to touch
  7. Cool thoroughly before adding filling
  8. In bowl, beat egg yolks until thick and lemon colored
  9. Add sugar, beat well
  10. Stir in lemon juice, and rind
  11. Pour into double boiler, cook until thick, stirring constantly
  12. Remove from heat and cool ( I pour into bowl to cool)
  13. Whip cream and fold into *cooled* filling
  14. Garnish with lemon slices
  15. Pour filling into meringue shell
  16. Cover with aluminum foil and refrigerate until ready to serve
