Asparagus Arugula Frittata

- 4 eggs shopping list
- 3 tbsp of half and half shopping list
- 1 tsp of minced fresh thyme ( I love this herb) or use chives shopping list
- pinch of salt shopping list
- fresh ground black pepper shopping list
- 6 asparagus spears shopping list
- 1/2 cup of shredded gruyere cheese shopping list
- 2 tbsp of unsalted butter shopping list
- 2 cups of coarsely chopped arugula (or spinach) not near as flavorful shopping list
How to make it
- Preheat the broiler.
- Beat the eggs, cream, thyme salt and pepper.
- Cut the asparagus in one inch pieces and steam cook for 90 seconds in the microwave. Pat dry.
- Combine asparagus and the gruyere. (I add a grating of nutmeg here)
- Melt butter in 10 inch ovenproof skillet over medium heat. When it just begins to foam and turn nutty, add the arugula or spinach. Saute til wilted about one minute.
- Lower heat to low and pour in the egg mixture.
- Cook until the bottom is set and the top is wet.
- Sprinkle with asparagus mixture.
- Broil for 2 to 3 minutes.
- Serve immediately.
