Something for just the two of us old folk, a little more upscale than just scrambled eggs and it feels like a meal.

Ingredients
  • 4 eggs
  • 3 tbsp of half and half
  • 1 tsp of minced fresh thyme ( I love this herb) or use chives
  • pinch of salt
  • fresh ground black pepper
  • 6 asparagus spears
  • 1/2 cup of shredded gruyere cheese
  • 2 tbsp of unsalted butter
  • 2 cups of coarsely chopped arugula (or spinach) not near as flavorful

Directions
  1. Preheat the broiler.
  2. Beat the eggs, cream, thyme salt and pepper.
  3. Cut the asparagus in one inch pieces and steam cook for 90 seconds in the microwave. Pat dry.
  4. Combine asparagus and the gruyere. (I add a grating of nutmeg here)
  5. Melt butter in 10 inch ovenproof skillet over medium heat. When it just begins to foam and turn nutty, add the arugula or spinach. Saute til wilted about one minute.
  6. Lower heat to low and pour in the egg mixture.
  7. Cook until the bottom is set and the top is wet.
  8. Sprinkle with asparagus mixture.
  9. Broil for 2 to 3 minutes.
  10. Serve immediately.
