A wonderful salad that can be a meal in itself if served with crusty bread and brie on the side with a glass of red wine with its own hint of cherry in it. You've got to use fresh cherries for this, so get them in season and enjoy.

Ingredients
  • SALAD
  • 3 c. shredded green cabbage
  • 2 c. pitted, halved cherries
  • 2 c. torn fresh spinach
  • ½ c. shredded jicama or radishes
  • 1 c. shredded carrot
  • ½ c. diced red onion
  • Dressing:
  • 3 T olive oil
  • 2 T fresh lime juice
  • ½ jalapeno, seeded & minced
  • ½ tsp lime zest
  • ¼ tsp each chili powder, ground cumin, salt

Directions
  1. Prepare the dressing first and blend well. Use non-latex gloves to handle the jalapeno or you'll accidentally rub your eye and it'll burn! You can refrigerate the dressing while you blend the remaining ingredients. Stir everything well then toss with the dressing. The flavours and textures are sensual and satisfying. Don't used canned cherries!

Oh, wow!! This sounds amazing! I bet the sweet cherries mix really well with the veggies, and a touch of jalapeno & lime too?? I love jicama! GREAT great post, Biceps :)
