This dish is great after a long night at the disco dancing and having fun with a boy or girl friend. Great after having sex in the morning. Puts you back in the mood and restores your energy.

Ingredients
  • 10 Fresh farm eggs
  • 4 table spoons butter or olive oil, it depends on what you like. I prefer butter for this dish.
  • 1 table spoon chives chopped
  • 1/2 tea spoon sea salt, or coarse salt
  • 1/2 tea spoon white pepper corns curshed in a morter before use.
  • 1/2 tea spoon black pepper corns crushed in a morter before use.
  • 1 cup fresh mushroom cut in slices. each head 3-5 slices.
  • 2 table spoons soure cream
  • 2 medium size tomatoes sliced. 2 cm each slice.
  • 2 garlic gloves crushed.

Directions
  1. Crack the eggs in a large bowl, mix and beat well for 10 minutes. this will wake you up.
  2. Add 2 table spoons of soure cream and continue beating and mixing for 5 more minutes. the mixture should become creamy and thick. Sprinkle the chives and mix for few seconds.
  3. Heat 2 table spoons in a frying pan until it starts changing color. Add the sliced mushroom and mix gently. It will start to caramelize from the out side, keeping freshness inside. After 1-2 minutes remove and set a side.
  4. In a non stick frying pan melt 2 table spoons of butter. When it is enough hot add the beaten eggs with cream and chives.
  5. Sprinkle the salt, crushed white and black pepper corns all over the surface. Then cover the surfce of the omelet with fried mushrooms. The mushroom should sink abit in the uncooked mix. Do not touch any thing after that.
  6. Keep cooking until the surface of the omelet is about to be done.
  7. Remove of the stove, slide the omelet into a large plate folding it in half, the mushroom side to the inside.
  8. In the same frying pan, fry tomato slices covered with garlic for 1 minute each side.
  9. Cut the omelet in slices about 7 cm each. Place in a serving plate with the fried garlicky tomato.
  10. Enjoy with french bread, toast or a baked blueberry muffen.
