Chicken Cheddar Avocado Melt Recipe
When faced with extra poached chicken and a ripe avocado from Dad's tree, this is the requested sandwich from the family.

Ingredients
  • 1/3 cup of mayonnaise
  • 1/8 cup of chili sauce
  • 1 green onion chopped
  • dash of cumin
  • 1 whole chicken breast, poached, cooled and sliced
  • 1 ripe avocado, peeled, sliced
  • 4 thick cut slices of pumpernickel bread, toasted
  • 8 slices of sharp cheddar cheese
  • dash of paprika

Directions
  1. Mix the mayonnaise, chili sauce, cumin and onion.
  2. Spread on toasted pumpernickel
  3. Layer chicken, avocado and cheddar on the toast.
  4. Run under broiler until it bubbles,
  5. Sprinkle with paprika.
  6. Enjoy......great with a bowl of soup to make it a dinner.
  7. ***You know your pantry is in trouble when the paprika starts to walk around on top of the deviled eggs. Happened to mom and me one time and we were horrified to find our spices had been buggy. Ditched them all and started over. What a mess, and we had to toss all those beautiful eggs.***

Mmmm-mmmmm-mmmmm, that sounds like my kind of sandwich - thanks for another keeper, notcho. I could never resist anything with avocado in it!! This is so easy, and I usually have those ingredients on hand - will make a nice quick dinner for us...


The spread sounds yummy, and I love Pumpernickle bread! Great addition of avocado here!
