Tamale Pie

- 2 pounds ground beef shopping list
- 32 ounces canned corn shopping list
- 52 ounces canned diced tomatoes shopping list
- 1 ripe green bell pepper shopping list
- 3 beef tamales shopping list
- 1/4 pound colby longhorn cheese shredded shopping list
- 1 small can pitted black olives shopping list
How to make it
- Thoroughly break up and brown ground beef then drain fat
- Combine equal amounts tomatoes and corn in a strainer then mix and drain thoroughly.
- Slice tamales into 1/4" thick slices.
- Gut and slice bell pepper into approximately 1/8" ring slices.
- In a deep casserole bowl layer the ingredients in the following order.
- One layer tamale slices, one layer corn and tomato mixture, one layer ground beef, one layer corn and tomato mix, one layer ground beef, one layer cheese then one layer tamale slices.
- Decorate with bell pepper and olives putting pepper slices so their edges touch but don't overlap.
- Fill in holes with olives then bake at 375 for 1 hour.
