This is a simple vegetable salad or side dish. Amounts are adjustable to taste. Finely chopped garlic could be added for variation. I like the veggies just slightly cooked, crunchy and when eaten cold.

Ingredients
  • 6 cups mixed broccoli and cauliflower florets (I used a frozen pack - adjust amount to own needs)
  • 1 teaspoon salt
  • Water to cover veggies in pot
  • 1 lemon - need the juice only
  • 2 table spoons olive oil (adjust amount to own taste)
  • Salt and freshly ground pepper to taste

Directions
  1. The frozen pack i used stated that the veggies cooked for 6 minutes in boiling water. So I’m going to guess that it’s a safe bet to cook it in the pot of salted boiling water for 6 minutes or until lightly cooked but still firm or even crispy. (personally, I prefer this salad crispy)
  2. Drain and leave to cool down.
  3. Once cooled to room temp you can add the olive oil, salt to taste and lemon juice
  4. Mix well and add freshly ground pepper to taste
  5. Leave to absorb flavors while cooking the rest of your meal. Can keep in fridge
  6. Mix again before adding to the plates
