I made these for my mom's birthday last year! The only thing I did differently was use chunk pineapple. After preparing the muffin cups, I arranged the pineapple around a cherry in the center. Personally, I like the way the fruit flavors the cake as it cooks. Just a personal preference though!

My mom and I love to make Pineapple Upside down cake from the old Betty Crocker cookbook, after we eat Hawaiian Chicken for dinner (great sesame/ soy sauce/ sweet chicken dish). This sounds like a GREAT alteration for the dinner's dessert! Thanks for this one!
