How to make it

  • Drain pineapple; reserve juice.
  • Stir together melted margarine and brown sugar. Evenly divide sugar mixture into 3-inch greased muffin cups. Arrange pineapple over sugar mixture.
  • Prepare cake mix according to package directions, replacing water with reserved juice. Evenly pour batter into muffin cups.
  • Bake at 350 degrees F. 20 to 25 minutes or until toothpick inserted in center comes out clean.
  • Cool 5 minutes. Loosen edges and invert onto serving platter. Place raspberries in center of pineapple slices.

    My mom and I love to make Pineapple Upside down cake from the old Betty Crocker cookbook, after we eat Hawaiian Chicken for dinner (great sesame/ soy sauce/ sweet chicken dish). This sounds like a GREAT alteration for the dinner's dessert! Thanks for this one!

    I made these for my mom's birthday last year! The only thing I did differently was use chunk pineapple. After preparing the muffin cups, I arranged the pineapple around a cherry in the center. Personally, I like the way the fruit flavors the cake as it cooks. Just a personal preference though!
