This is an alternative to using potato rather than tortillas and has a thicker sauce than normal.

Ingredients
  • one pound cooked cubed chicken breast
  • frozen hash brown patties
  • 28 oz can mild to hot enchilada sauce
  • 10 oz can Campbell's Southwest Pepper Jack soup
  • 4 oz can of fire roasted diced green chilis
  • 16 oz can fat free jalapeno refried beans
  • 4 oz sliced fresh mozzerella cheese
  • 1 cup shredded sharp cheddar cheese
  • one half cup finely shredded mexican blend cheese
  • vegetable oil
  • 1 cup chopped onion

Directions
  1. pour enough oil into 13X9 baking dish to cover botton to just coat
  2. add layer of hash brown patties to cover bottom
  3. spread chicken evenly over patties
  4. sprinkle onion over chicken
  5. sprinkle with cheddar cheese
  6. spread layer of refried beans after heating to soften
  7. evenly place sliced mozzarella cheese on beans
  8. mix enchilada sauce, soup and green chilis in a bowl
  9. pour mixture over all ingredients to cover
  10. bake at 350 degrees for 45 mins., uncovered
  11. remove and top with shredded mexican blend cheese
  12. cook another 10 to 15 minutes
  13. remove, let cool for 5 minutes, plate and enter heaven
