Chicken Potato Enchilada Bake

- one pound cooked cubed chicken breast shopping list
- frozen hash brown patties shopping list
- 28 oz can mild to hot enchilada sauce shopping list
- 10 oz can Campbell's Southwest pepper Jack soup shopping list
- 4 oz can of fire roasted diced green chilis shopping list
- 16 oz can fat free jalapeno refried beans shopping list
- 4 oz sliced fresh mozzerella cheese shopping list
- 1 cup shredded sharp cheddar cheese shopping list
- one half cup finely shredded Mexican blend cheese shopping list
- vegetable oil shopping list
- 1 cup chopped onion shopping list
How to make it
- pour enough oil into 13X9 baking dish to cover botton to just coat
- add layer of hash brown patties to cover bottom
- spread chicken evenly over patties
- sprinkle onion over chicken
- sprinkle with cheddar cheese
- spread layer of refried beans after heating to soften
- evenly place sliced mozzarella cheese on beans
- mix enchilada sauce, soup and green chilis in a bowl
- pour mixture over all ingredients to cover
- bake at 350 degrees for 45 mins., uncovered
- remove and top with shredded mexican blend cheese
- cook another 10 to 15 minutes
- remove, let cool for 5 minutes, plate and enter heaven
