Fruited Rice Salad On The Half

- 4 cups cooked wild rice shopping list
- 1/4 cup raisins shopping list
- 1/2 cup chopped dried apricots shopping list
- 1/2 cup chopped pecans shopping list
- 2 avocados shopping list
- Vinaigrette: shopping list
- 1/4 cup vegetable oil shopping list
- 1 tablespoon lemon juice shopping list
- 1 tablespoon red wine vinegar shopping list
- 1 teaspoon honey shopping list
- 1/4 teaspoon ground coriander shopping list
- 1/4 teaspoon spicy mustard shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Chill rice.
- Pour boiling water over raisins and apricots in small bowl.
- Let stand 10 minutes then drain and cool.
- Heat oven to 350.
- Place pecans on shallow baking pan and bake 8 minutes.
- Remove from oven and set aside.
- Combine vinaigrette ingredients and shake until well combined.
- Toss rice, raisins, apricots and pecans with Vinaigrette then refrigerate 1 hour.
- Just before serving halve seed and peel avocados.
- Fill each half with rice salad and serve.
