Splenda Chocolate Chip Cookies Recipe
This recipe comes from the Splenda web-site. I really like these because they use less sugar and butter than my usual recipe and they have a great combination of chewy and crisp.

Ingredients
  • 2/3 C. butter or margarine, softened
  • 2/3 C. brown sugar, firmly packed
  • 2/3 C. Splenda Granular
  • 2 tsp. vanilla
  • 2 eggs
  • 1 1/2 C. all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 C. semi-sweet chocolate chips, or to make it more like Toll House Cookies add the whole bag

Directions
  1. Preheat oven to 350 degrees F.
  2. Cream butter, brown sugar, Splenda Granular and vanilla together in a medium mixing bowl. Mix until well blended and creamy.
  3. Add eggs, one at a time, mixing well after each addition. Scrape sides of bowl.
  4. In a small mixing bowl, mix flour, baking soda and salt. Add gradually to butter mixture, mixing until all is well blended.
  5. Stir in chocolate chips.
  6. Place a level tablespoon (or use a cookie scoop) of cookie dough on an ungreased baking sheet.
  7. Bake 10-12 min. or until golden brown.
  8. Remove from oven and cool on a wire cooling rack.
  9. Note: The cookie dough freezes well. I portion out cookie amounts and separate them with wax paper before freezing them. This allows me to cook just a few at a time if I want to. Just increase the cooking time by 3-4 minutes.
