Southwest Cornbread Recipe
Great with chili's, soups and stews

Ingredients
  • 3 cups Cornmeal mix (self rising)
  • 3 eggs, beaten
  • 2 Tbs sugar
  • 1/1/2 Cups vegetable or canola oil
  • 1 Can creamed corn
  • 1 onion, grated or finely chopped
  • 1 Cup sharp chedder cheese finely grated
  • 2 small cans chopped green chilis (or 1 1/2 cups of fresh roasted if you can find in your area)

Directions
  1. Preheat over ot 400 degrees
  2. Mix dry ingredients well and make well in center.
  3. Add eggs, oil, corn and blend well.
  4. Mix in remaining ingredients.
  5. Pour in to well greased 9x9 pan or greased heated iron skillet.
  6. Bake for 30 to 40 minutes or until done
