Rhubarb Cake Recipe

Ingredients

Cream together:

1/2 cup shortening and 1 1/2 cups brown sugar

Add:

2 cups flour 1 egg 1 tsp vanilla 1 tsp soda

1 cup sour milk (1 cup milk with 1/2 tsp vinegar)

Stir in:

2 cups rhubarb, cut into small pieces

Top with:

1/2 cup sugar

1 T cinnamon

Directions

bake 350 degrees for 40 minutes in a greased 9 x 13 pan

This sounds so good, I love rhubarb but it's hard to find in the south, I guess it's more of a northern thing. When I lived in Michigan you could find it anywhere. Good post, if I ever come across some rhubarb here, I try this out.
