How to make it

  • Whisk first 8 ingredients in medium bowl to blend
  • Beat sugar, butter until well blended. Beat in eggs, then yolks and vanilla
  • Gradually beat in buttermilk; beat in pumpkin in 4 additions.
  • Fold in dry ingredients, in four additions
  • Cover and chill 3 hours
  • Roll out on lightly floured surface and cut with a 2" doughnut cutter
  • Fry in oil @ 365 to 370 until golden, turning occasionally, about 2 minutes for holes and about 1 minute per side for doughnuts
  • Transfer to heavily lined paper towel covered plate (paper bags are better, if you have them)
  • Cool completely, place on racks with wax paper under them and glaze, let dry or
  • Toss doughnuts & holes in a bowl or paper lunch bag with spiced sugar until covered, while a little warm is best, or do some glazed and some with spiced sugar
