How to make it

  • Cook the potatoes in their skins in boiling salted water until just tender. Drain and leave until cold.
  • Heat the oil in a 20cm (8 inch) non stick frying pan. Add the bacon, garlic and spring onion and fry until the bacon is cooked.
  • Meanwhile, peel and coarsely grate the cold potatoes.
  • Add to the pan and cook for 2 minutes, stirring to mix well and seasoning with pepper and a little salt.
  • Pat the mixture into a flat cake, so that it begins to stick together.
  • Continue cooking over a medium heat for about 10 minutes, or, until the underside is well browned.
  • Sprinkle the parsley over the potato cake, then, using a cheese slicer, cut the cheese into thin slice directly over the top.
  • Cook under a hot grill until well browned and bubbling.
  • Serve in wedges straight from the pan with a crisp green salad (I like a poached egg aswell)!

    Examples of waxy potatoes: Charlotte, Pink Fir Apple, new potatoes and salad potatoes. But I have used all sorts and it's been lovely.
