Cheese and Potato Cake

- 2ib waxy potatoes shopping list
- salt and pepper shopping list
- 50g/2oz smoked, streaky bacon, derinded and chopped shopping list
- 2 spring onions, finely chopped shopping list
- 1 tbsp olive oil shopping list
- 1 garlic clove, crushed shopping list
- 2 tbsp parsley, chopped shopping list
- 75g/3oz Jarlsberg or mozzarella cheese shopping list
How to make it
- Cook the potatoes in their skins in boiling salted water until just tender. Drain and leave until cold.
- Heat the oil in a 20cm (8 inch) non stick frying pan. Add the bacon, garlic and spring onion and fry until the bacon is cooked.
- Meanwhile, peel and coarsely grate the cold potatoes.
- Add to the pan and cook for 2 minutes, stirring to mix well and seasoning with pepper and a little salt.
- Pat the mixture into a flat cake, so that it begins to stick together.
- Continue cooking over a medium heat for about 10 minutes, or, until the underside is well browned.
- Sprinkle the parsley over the potato cake, then, using a cheese slicer, cut the cheese into thin slice directly over the top.
- Cook under a hot grill until well browned and bubbling.
- Serve in wedges straight from the pan with a crisp green salad (I like a poached egg aswell)!
