Ingredients
  • 12 slices bread, crust removed, toasted
  • 1 ounce butter
  • 1 pound lobster meat, cooked, cut into thin slices
  • 1 ounce red pimentos
  • 1 each anchovy, finely minced
  • 1 ounce caviar

Directions
  1. Butter toasted bread. Arrange the lobster meat, anchovies, and pimento strips on the toast alternating the colors to give eye appeal.
  2. Arrange on a serving tray with a doily underneath and sprinkle caviar over all. Garnish with lemon wedges and parsley.

Sounds good to me. I have never even tried lobster! we were going to start this year since my husband got a boat for a bonus from his boss, but this summer someone stole the motor so we never had a chance. Does lobster meat come in tubes like crab meat?

PS what kind of Caviar do you use? Salmon roe or Sturgeon? I know how to make Roe by the way, will never give that recipe away, but will say it's hard work and now I know why it's so expensive.
