Hearty Sausage Hot Pot With Pasta Recipe

Ingredients

1 tbsp olive oil

3 Italian-style smoked sausage

1 tsp minced garlic

1 onion, peeled and sliced

1 stalk celery, sliced

1 carrot, peeled and sliced

1 courgette, trimmed and sliced

400 grams Italian whole peeled tomatoes

1 cup beef stock

8-10 black olives, stoned and chopped

1/2 cupspirali pasta

2 tbsp fresh basil chopped or 2 tsp dried

1 tbsp chopped fresh parsley

Directions

Heat the oil in a lidded frying pan and quickly brown the sausages over a high heat. Set aside.

Lower the heat, add the garlic, onion and celery and cook for 2-3 minutes. Add the carrot and courgette and cook for a further 1 minute.

Add the tomatoes, beef stock, olives and pasta. Slice the sausages into 4-5 pieces and return to the pan.

Cover and cook for 12-15 minutes until the vegetables and pasta are tender. Sprinkle over the basil and parsley. Season as wished and serve in large bowls with crusty bread.
