Hearty Sausage Hot Pot With Pasta Recipe
This hot pot, served in one dish, is a meal on its own.

Ingredients
  • 1 tbsp olive oil
  • 3 Italian-style smoked sausage
  • 1 tsp minced garlic
  • 1 onion, peeled and sliced
  • 1 stalk celery, sliced
  • 1 carrot, peeled and sliced
  • 1 courgette, trimmed and sliced
  • 400 grams Italian whole peeled tomatoes
  • 1 cup beef stock
  • 8-10 black olives, stoned and chopped
  • 1/2 cupspirali pasta
  • 2 tbsp fresh basil chopped or 2 tsp dried
  • 1 tbsp chopped fresh parsley

Directions
  1. Heat the oil in a lidded frying pan and quickly brown the sausages over a high heat. Set aside.
  2. Lower the heat, add the garlic, onion and celery and cook for 2-3 minutes. Add the carrot and courgette and cook for a further 1 minute.
  3. Add the tomatoes, beef stock, olives and pasta. Slice the sausages into 4-5 pieces and return to the pan.
  4. Cover and cook for 12-15 minutes until the vegetables and pasta are tender. Sprinkle over the basil and parsley. Season as wished and serve in large bowls with crusty bread.
