How to make it

  • Heat the oil in a lidded frying pan and quickly brown the sausages over a high heat. Set aside.
  • Lower the heat, add the garlic, onion and celery and cook for 2-3 minutes. Add the carrot and courgette and cook for a further 1 minute.
  • Add the tomatoes, beef stock, olives and pasta. Slice the sausages into 4-5 pieces and return to the pan.
  • Cover and cook for 12-15 minutes until the vegetables and pasta are tender. Sprinkle over the basil and parsley. Season as wished and serve in large bowls with crusty bread.
