Hearty Sausage Hot Pot With Pasta

- 1 tbsp olive oil shopping list
- 3 Italian-style smoked sausage shopping list
- 1 tsp minced garlic shopping list
- 1 onion, peeled and sliced shopping list
- 1 stalk celery, sliced shopping list
- 1 carrot, peeled and sliced shopping list
- 1 courgette, trimmed and sliced shopping list
- 400 grams Italian whole peeled tomatoes shopping list
- 1 cup beef stock shopping list
- 8-10 black olives, stoned and chopped shopping list
- 1/2 cupspirali pasta shopping list
- 2 tbsp fresh basil chopped or 2 tsp dried shopping list
- 1 tbsp chopped fresh parsley shopping list
How to make it
- Heat the oil in a lidded frying pan and quickly brown the sausages over a high heat. Set aside.
- Lower the heat, add the garlic, onion and celery and cook for 2-3 minutes. Add the carrot and courgette and cook for a further 1 minute.
- Add the tomatoes, beef stock, olives and pasta. Slice the sausages into 4-5 pieces and return to the pan.
- Cover and cook for 12-15 minutes until the vegetables and pasta are tender. Sprinkle over the basil and parsley. Season as wished and serve in large bowls with crusty bread.
