How to make it

  • Place tortillas in oven. Heat to 425°F. Have a shallow 2- to 2 1/2-qt baking dish ready.
  • Mix salsa, sour cream and cilantro in a medium bowl. Spread 1/2 cup over bottom of baking dish. In another bowl, combine chicken, 1 cup cheese and the roasted peppers. Remove tortillas from oven.
  • Spoon scant 1/2 cup chicken mixture down center of each tortilla. Roll up; place seam side down in baking dish. Pour remaining salsa mixture over top.
  • Cover with foil and bake 15 minutes until bubbly. Uncover; sprinkle with remaining cheese and bake 10 minutes, or until cheese has melted.

    I made this last night after a pregnancy craving for Mexican. It was really really good! The surprising thing about this is that is was very filling, I only had two woth some sour cream on top and I was stuffed! I've passed this along to my co-worker so she can try it too. Thanks!

    Living in New Mexico, Land of Enchantment and Chilies, I am looking forward to making this, but using fresh roasted mild green chili and substituting Cheddar for the swiss cheese. I will let you know how it turned out.

    We just had this for dinner and it went over great! The kids loved it and it was fun to make! I threw in 2 banana peppers into the pepper/cheese/chicken mix and they worked well too.
    This has quickly become a favorite of ours!

    I just went out and bought everything I need for this!!
    I couldn't find a jar of roasted red peppers so I have to improvise :)
    I'll let you know what I think, I'm sure it's as amazing as it looks!!
