Ingredients
  • 8 corn tortillas, stacked and wrapped in foil
  • 1 1/4 cups green salsa (salsa verde)
  • 1/2 cup reduced-fat sour cream
  • 1/4 cup chopped cilantro
  • 1 1/2 cups (8 oz) diced cooked chicken breast
  • 6 oz (about 1.5 cups) Swiss cheese,shredded
  • 1 jar (7 oz) roasted red peppers, sliced
  • Garnish: diced tomato and sliced scallion

Directions
  1. Place tortillas in oven. Heat to 425°F. Have a shallow 2- to 2 1/2-qt baking dish ready.
  2. Mix salsa, sour cream and cilantro in a medium bowl. Spread 1/2 cup over bottom of baking dish. In another bowl, combine chicken, 1 cup cheese and the roasted peppers. Remove tortillas from oven.
  3. Spoon scant 1/2 cup chicken mixture down center of each tortilla. Roll up; place seam side down in baking dish. Pour remaining salsa mixture over top.
  4. Cover with foil and bake 15 minutes until bubbly. Uncover; sprinkle with remaining cheese and bake 10 minutes, or until cheese has melted.

Erika, that was supposed to go on the same line as the cheese. It is shredded Swiss cheese. Sorry about that. :-)


I just went out and bought everything I need for this!!
I couldn't find a jar of roasted red peppers so I have to improvise :)
I'll let you know what I think, I'm sure it's as amazing as it looks!!


We just had this for dinner and it went over great! The kids loved it and it was fun to make! I threw in 2 banana peppers into the pepper/cheese/chicken mix and they worked well too.
This has quickly become a favorite of ours!


Living in New Mexico, Land of Enchantment and Chilies, I am looking forward to making this, but using fresh roasted mild green chili and substituting Cheddar for the swiss cheese. I will let you know how it turned out.
