Amish Oatmeal Whoopie Pies Recipe
This is another type of whoopie pie. It is a very flat cookie. It has a tendancy to fall apart when you take it off the pan. I let mine rest on the cookie sheet.

Ingredients
  • 2 cups brown sugar
  • 3/4 cup margarine
  • 2 eggs
  • 1/2 tsp salt
  • 2 cups flour
  • 2 cups oatmeal
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 tsp soda in 3 Tbsp boiling water.
  • For Filling
  • 2 egg whites
  • 2 Tbsp milk
  • 2 tsp vanilla
  • 1 1/2 cup shortening
  • 4 Tbsp four
  • 1 pound powdered sugar

Directions
  1. Cream together sugar, margarine, and eggs. Add salt, flour, oatmeal, cinnamon and baking powder. Add soda and water last. Beat well.
  2. Bake at 350 degrees for 10 minutes.
  3. For filling:
  4. beat egg whites until stiff. Add vanilla, flour and milk. Beat well and add shortening and sugar.
  5. Place cream filling between two cookies.
  6. Enjoy!!!
