Amish Oatmeal Whoopie Pies

This is another type of whoopie pie. It is a very flat cookie. It has a tendancy to fall apart when you take it off the pan. I let mine rest on the cookie sheet.
Ingredients
- 2 cups brown sugar shopping list
- 3/4 cup margarine shopping list
- 2 eggs shopping list
- 1/2 tsp salt shopping list
- 2 cups flour shopping list
- 2 cups oatmeal shopping list
- 1 tsp cinnamon shopping list
- 1 tsp baking powder shopping list
- 2 tsp soda in 3 Tbsp boiling water. shopping list
- For Filling shopping list
- 2 egg whites shopping list
- 2 Tbsp milk shopping list
- 2 tsp vanilla shopping list
- 1 1/2 cup shortening shopping list
- 4 Tbsp four shopping list
- 1 pound powdered sugar shopping list
How to make it
- Cream together sugar, margarine, and eggs. Add salt, flour, oatmeal, cinnamon and baking powder. Add soda and water last. Beat well.
- Bake at 350 degrees for 10 minutes.
- For filling:
- beat egg whites until stiff. Add vanilla, flour and milk. Beat well and add shortening and sugar.
- Place cream filling between two cookies.
- Enjoy!!!
