Ingredients

How to make it

  • Preheat oven to 350 degrees F.
  • Mix ground pecans and flour together thoroughly.
  • Beat softened butter with sugar until fluffy. Add vanilla extract and mix well.
  • Add flour/nut mixture and mix on low speed until well blended.
  • Make small balls of dough in your hand and place on non-stick cookie sheet about 1" apart. Make a dimple with your finger in each ball, being careful not to punch all the way down to the cookie sheet.
  • Bake for 15 minutes. Let cool on cookie sheet for a few minutes, then remove to rack.
  • Dust cookies with icing sugar.
  • Heat jam in small saucepan until smoothly liquid. Fill cavity in each cookie with jam. Let cool completely before enjoying.

    These were so delicious and easy to make. I've made two batches so far, one on a baking stone, and one on a regular cookie sheet. The ones made on the baking stone were much better. Five forks!!

    Mmm that sounds good too! I'm sure you could vary the filling to your taste - lots of combinations would work.

    It's definitely less messy than rolling the dough in nuts. And even my fiancé, who hates nuts, loves these cookies!

    These look great. I make a similar one, rolling the dough in nuts, but this looks just as tasty, and much easier. I'll have to give it a try.
