From oanababy 17 years agoIngredients
- 1 3/4 cups ground pecans (or other nuts to your taste) shopping list
- 1 3/4 cups all-purpose flour shopping list
- 1/2 cup sugar shopping list
- 8 oz (2 sticks) butter shopping list
- 1 tsp vanilla extract shopping list
- 1/4 cup icing sugar shopping list
- about 1 cup strawberry jam (marmalade or apricot jam work well too) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Mix ground pecans and flour together thoroughly.
- Beat softened butter with sugar until fluffy. Add vanilla extract and mix well.
- Add flour/nut mixture and mix on low speed until well blended.
- Make small balls of dough in your hand and place on non-stick cookie sheet about 1" apart. Make a dimple with your finger in each ball, being careful not to punch all the way down to the cookie sheet.
- Bake for 15 minutes. Let cool on cookie sheet for a few minutes, then remove to rack.
- Dust cookies with icing sugar.
- Heat jam in small saucepan until smoothly liquid. Fill cavity in each cookie with jam. Let cool completely before enjoying.

It's definitely less messy than rolling the dough in nuts. And even my fiancé, who hates nuts, loves these cookies!

I have a cookie recipe that uses cheese cake filling instead of jam. I need to find that and post it.

Mmm that sounds good too! I'm sure you could vary the filling to your taste - lots of combinations would work.
