Ingredients
  • 1 cup sugar
  • 1/4 cup margarine
  • 2 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup grapefruit juice
  • 2 cups fresh or frozen cranberries, coarsley chopped

Directions
  1. preheat oven to 350 degrees. grease muffins tins
  2. beat sugar and margarine together in a medium mixing bowl. until lightly and fluffy.
  3. add eggs, one at a time, beating after each addition
  4. combine flour, powder and salt in a separate bowl. add this alternately with the juice to the egg mixture. stir in cranberries.
  5. spoon into muffin cups, filling 3/4 full.
  6. bake 20 minutes or until golden brown.
  7. makes 12 muffins

Love the citrus and cranberry combination. We are a muffin lovin family. Great for breakfast with a smoothie. Teen pleasing. Great post.
