Oyster Fritters

- 1/2 - cup corn oil, divided shopping list
- 1/2 - cup plus 2 tablespoons finely chopped shallots shopping list
- 1/2 cup (scant or about 7 tablespoons cassava flour or potato flour) shopping list
- 1 - kilo fresh oyster, shelled (make about 150 grams shelled oysters) shopping list
- 1-2 - tablespoon water shopping list
- Dipping Sauce: shopping list
- 1/4 - cup soy sauce shopping list
- 1 - tablespoon farlic chili sauce shopping list
How to make it
- In a skillet, heat 3 tablespoons of the corn oil and saute shallots until almost transparent; set aside.
- In a deep bowl, combine shallots, cassava flour or potato flour and oyster. Mix throughly. Add a little water if necessary to make a thick batter.
- Shape into small round fritters
- In a nonstick skillet, heat remaining oil. Fry fritters on moderate heat, turning over to cook evenly. Repeat the process until all the oyster batter has been cooked, adding more oil if necessary. Drain on paper towels and transfer to platter.
- Mix dipping sauce ingredients and serve with oyster fritters.
