Chicken Tikka Masala

- For marinade: shopping list
- 1 large, boneless, skinless chicken breast, cut into bite size pieces shopping list
- 3 tbsp natural yogurt shopping list
- 1 tsp lemon/lime juice shopping list
- 1 tsp turmeric shopping list
- 1 tsp chilli powder shopping list
- 1 tsp coriander and cumin powder shopping list
- 1 tsp ginger and garlic, crushed (almost pureed) shopping list
- salt to taste shopping list
- For Tikka masala paste: shopping list
- 1 medium onion shopping list
- 1 inch piece of fresh ginger shopping list
- 2 cloves garlic shopping list
- 1-2 tbsp olive oil shopping list
- 1 tsp chilli powder shopping list
- 1 tsp coriander powder shopping list
- 1 tsp cumin powder shopping list
- 4 tbsp tomato puree shopping list
- 1 tsp salt shopping list
- 3 tbsp double cream shopping list
- Sprig of fresh coriander leaves shopping list
How to make it
- Mix together the marinade ingredients, coat the chicken pieces and leave overnight.
- Chop the onion and crush the garlic and ginger.
- In a large wide pan, heat the oil and fry the onion over a medium heat until brown.
- Add the ginger and garlic to the onion pan and saute. Then add the spices and cook for 30 seconds.
- Stir in the tomato puree and simmer for 1-2 minutes.
- Add the marinated chicken, stir in and cook for 10 - 15 minutes at medium heat with lid on.
- Add the cream and gently stir the chicken for 3-5 minutes.
- Serve the Chicken Tikka Masala in the middle of the plate, spoon pilau rice aroung it.
- Garnish with coriander leaves.

Another great recipe, I'm a huge fan of Tikka Masala! (Marinating in the spice yogurt makes all the diferance in the world, doesn't it?) Great recipe, thanks for posting it, Girl :)
