Chicken Tikka Masala Recipe
This dish was cooked by a lady called Farida Patel and was a runner-up on the recent British TV reality show called Britains Best Dish. I haven't tried it yet, bit intend to this week. The chicken should be marinated over night.

Ingredients
  • For marinade:
  • 1 large, boneless, skinless chicken breast, cut into bite size pieces
  • 3 tbsp natural yogurt
  • 1 tsp lemon/lime juice
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander and cumin powder
  • 1 tsp ginger and garlic, crushed (almost pureed)
  • Salt to taste
  • For Tikka Masala paste:
  • 1 medium onion
  • 1 inch piece of fresh ginger
  • 2 cloves garlic
  • 1-2 tbsp olive oil
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 4 tbsp tomato puree
  • 1 tsp salt
  • 3 tbsp double cream
  • Sprig of fresh coriander leaves

Directions
  1. Mix together the marinade ingredients, coat the chicken pieces and leave overnight.
  2. Chop the onion and crush the garlic and ginger.
  3. In a large wide pan, heat the oil and fry the onion over a medium heat until brown.
  4. Add the ginger and garlic to the onion pan and saute. Then add the spices and cook for 30 seconds.
  5. Stir in the tomato puree and simmer for 1-2 minutes.
  6. Add the marinated chicken, stir in and cook for 10 - 15 minutes at medium heat with lid on.
  7. Add the cream and gently stir the chicken for 3-5 minutes.
  8. Serve the Chicken Tikka Masala in the middle of the plate, spoon pilau rice aroung it.
  9. Garnish with coriander leaves.

I made this last night and it was delicious and relatively easy.. Definitely be making it again.


Another great recipe, I'm a huge fan of Tikka Masala! (Marinating in the spice yogurt makes all the diferance in the world, doesn't it?) Great recipe, thanks for posting it, Girl :)
