    When I make Alfredo, it's generally with pasta -- so I reserve some of the pasta cooking water to add to the sauce as a thinner if it becomes too thick when I'm reducing it. Also, I will heat the cream and butter, together with a dash of nutmeg and some salt (I've never used cream cheese as part of this dish) until the mixture reduces, then add the pasta, toss, and stir in the Parmesan at the last minute. By that time, the sauce is already pretty thick -- the Parmesan tends to thicken it even more, and the reserved pasta water comes in handy to thin it out, if necessary. The whole process takes a lot less than 20 minutes -- which means you can get the pasta to the table and start eating sooner!
