a simple but delicious chicken recipe. serves over rice or noodles and pour the extra sauces over all

Ingredients
  • 2 (14 oz) cans chicken broth
  • 4 boneless chicken breasts
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 Dijon mustard
  • 2 tsp tarragon
  • salt
  • pepper

Directions
  1. bring the chicken broth to a boil. add chicken to the broth, cover and reduce heat to simmer. poach into a bowl.
  2. return the pan to heat and add butter. when butter melts, add flour and cook about 2 minutes....whisking.
  3. slowly pour chicken broth back into the butter mixture, whisking until thickened.
  4. stir in mustard and tarragon. season with salt and pepper to taste.
  5. return chicken to the pan and coat with the sauce. simmer 2 to 3 minutes to heat chicken back through and to combine flavors.
  6. serve over rice....
