How to make it

  • In a large fry pan sauté peppers, onions, celery and garlic in olive oil till tender. Add tomato sauce and seasoning. Bring to boil, then lower heat and simmer about 2 minutes.
  • White sauce
  • In small pan melt butter, add flour and cook for a few seconds. Add milk slowly while stirring and bring to a boil. Cook till bubbling. Add the salt, pepper and parsley. Remove from heat, and add 1 1/2 cups of cheddar cheese. Stir till well blended. Set the white sauce aside. Add the sautéed vegetable sauce into the two cups of cooked elbow macaroni. Mix well. Turn macaroni into a greased 1 1/2 quart casserole. With a wooden spoon handle, poke 4 or 5 shallow holes in the macaroni mixture. Pour the white sauce over the top. The white sauce will fill up the holes and cover the top. Sprinkle with Parmesan cheese. Bake at 350-degree oven. Approximate baking time, 45 minutes. If casserole doesn't brown nicely set under the broiler for a few minutes. Let stand 10 minuets before serving. Excellent!
