This is another Flan recipe that I love, it's from our coasts ... yes! very Caribbean , it is quick and easy. If you want you can add shredded pineapple (in syrup)...

Ingredients
  • 1 cup Sugar ( for caramel)
  • 2 1/2 cups condensed milk
  • 1.5 cups evaporated milk
  • 3/4 cup milk
  • 2 tablespoons vanilla
  • 1 cup sugar
  • 9 eggs
  • 1 cup fresh shredded coconut

Directions
  1. Preheat oven to 350 degrees F. ( 175 degrees C)
  2. Place 1 cup of sugar into a large glass baking dish and insert in preheated oven until sugar melts , and turned until golden brown (without stirring, but shaking occasionally ... ), spread the caramel around the glass baking dish. Set aside to cool.
  3. Pour the condensed milk, evaporated milk, milk, eggs. sugar, and coconut into a blender, blend for about 2 minutes until smooth.
  4. Pour into baking dish over the caramel.
  5. Bake in preheated oven for 45 minutes until set. Remove from oven and let cool, run a knife around the edges of the glass baking dish to separate flan from sides.
  6. Refrigerate over night.
