Ingredients

4 Boneless Chicken Breasts

1 Jar 16oz of Salsa or Picante Sauce

1/4 Cup Apricot Preserves

Rice

Cooking spray

Directions

Start rice

Cut chicken into 1 inch cubes

Spray large fry pan with cooking spray and lightly brown chicken.

Drain pan.

Add Salsa or Picante Sauce to pan, heat for 5 minutes, stirring to coat chicken.

Add Appricot Preserves around chicken. Stir

Cover and simmer on low for 10 minutes, stirring once or twice.

Serve over rice.

Depending on who's eating, you can use mild, med or HOT salsa. Also you can use less Apricot preserves. I find with the mild sause I prefer a little less. A nice salad and you have a meal, enjoy!
