How to make it

  • Start rice
  • Cut chicken into 1 inch cubes
  • Spray large fry pan with cooking spray and lightly brown chicken.
  • Drain pan.
  • Add Salsa or Picante Sauce to pan, heat for 5 minutes, stirring to coat chicken.
  • Add Appricot Preserves around chicken. Stir
  • Cover and simmer on low for 10 minutes, stirring once or twice.
  • Serve over rice.
  • Depending on who's eating, you can use mild, med or HOT salsa. Also you can use less Apricot preserves. I find with the mild sause I prefer a little less. A nice salad and you have a meal, enjoy!
