Hot and Sweet Chicken

- 4 Boneless chicken breasts shopping list
- 1 Jar 16oz of salsa or picante sauce shopping list
- 1/4 Cup apricot preserves shopping list
- rice shopping list
- cooking spray shopping list
How to make it
- Start rice
- Cut chicken into 1 inch cubes
- Spray large fry pan with cooking spray and lightly brown chicken.
- Drain pan.
- Add Salsa or Picante Sauce to pan, heat for 5 minutes, stirring to coat chicken.
- Add Appricot Preserves around chicken. Stir
- Cover and simmer on low for 10 minutes, stirring once or twice.
- Serve over rice.
- Depending on who's eating, you can use mild, med or HOT salsa. Also you can use less Apricot preserves. I find with the mild sause I prefer a little less. A nice salad and you have a meal, enjoy!
