Roast Leg Of Lamb Recipe
This dish is fabulous. We have it for special occasions like Easter Dinner and it is always a treat for everyone.

Ingredients
  • 1 whole boneless leg of lamb
  • 1/2 cup peeled garlic cloves
  • 1/2 cup ground ginger
  • 1/2 cup ground mustard

Directions
  1. Stud the lamb with the garlic cloves by making small slits in the meat with a paring knife and inserting cloves into cuts.
  2. Combine ginger and mustard and rub lightly over meat.
  3. Put lamb in large roasting pan and roast at 300 for 30 minutes per pound.
  4. Baste occasionally with drippings and mustard rub.

Alterations


I add salt & black pepper to my mustard, rub it in and rest it on a bed of veggies. That way you have your veggies to make stock for the gravy
