How to make it

  • Cook the quinoa in the water until tender and fluffy (think rice).
  • Dice the cilantro, scallions, red onion, tomatoes, and bell peppers.
  • Add diced vegetables, beans, quinoa, and chiles to large bowl and mix well.
  • Mix cumin, coriander, olive, oil, lime juice, salt, and pepper and pour over salad. Mix through.
