How to make it

  • Preheat oven to 350 degrees. Liberally grease and lightly flour
  • 9X5X3-inch loaf pan. Individually prepare cranberries, nuts and
  • orange peel (optional) for use. Set aside. Mix flour, sugar,
  • baking powder, baking soda and salt together in a bowl. Cut in
  • shortening. Stir in orange juice, egg and orange peel
  • (optional), mixing just enough to moisten. Fold in cranberries
  • and nuts. Spoon mixture into a prepared pan. Bake 60 minutes
  • or until wooden pick inserted in center comes out clean. Cool
  • on rack for 15 minutes. Remove loaf from pan, cool completely.
  • Wrap and store overnight.

    While this recipe alone is delicious, I found it could be even moister with banaba nut bread. It is really yummy. For Christmas I quadrupled the recipe, baked it in smaller bread pans and gave them as gifts.
