Cranberry Nut Bread Recipe
A friend gave me this recipe a long time ago,this is so good toasted for breakfast..I hope you try it!!

Ingredients
  • 1 Cup Chopped Fresh or Frozen Cranberries
  • ¾ Cup Chopped Nuts
  • 1 Tlbs Grated Orange Peel (optional)
  • 2 Cups All-Purpose Flour
  • 1 Cup Sugar
  • 1-1/2 teas Baking Powder
  • 1 teas Salt
  • ½ teas Baking Soda
  • 2 Tlbs Shortening
  • ¾ Cups Orange Juice
  • 1 Egg, Beaten Well

Directions
  1. Preheat oven to 350 degrees. Liberally grease and lightly flour
  2. 9X5X3-inch loaf pan. Individually prepare cranberries, nuts and
  3. orange peel (optional) for use. Set aside. Mix flour, sugar,
  4. baking powder, baking soda and salt together in a bowl. Cut in
  5. shortening. Stir in orange juice, egg and orange peel
  6. (optional), mixing just enough to moisten. Fold in cranberries
  7. and nuts. Spoon mixture into a prepared pan. Bake 60 minutes
  8. or until wooden pick inserted in center comes out clean. Cool
  9. on rack for 15 minutes. Remove loaf from pan, cool completely.
  10. Wrap and store overnight.

While this recipe alone is delicious, I found it could be even moister with banaba nut bread. It is really yummy. For Christmas I quadrupled the recipe, baked it in smaller bread pans and gave them as gifts.
