This is a great way to cook kale, it's sweet, tangy and a great source of calcium.

Ingredients
  • 1 bunch of kale, rinsed and cut up (discard the thick stem for each leaf)
  • 1/2 sweet onion, diced
  • 1/3 c. honey
  • 1/3 c. mustard
  • 2 T olive oil
  • salt to taste
  • coarse pepper to taste

Directions
  1. Steam the kale until slightly soft then put aside
  2. Saute onion in olive oil for 5-8 minutes on medium heat
  3. Add honey and mustard and let thicken for a few minutes on low heat
  4. Add kale to the mix and cook until desired consistency
  5. Add salt and pepper to taste
  6. Taste-test it to make sure it has enough honey/mustard to your liking and enjoy
