A childhood favorite of my daughter's. Thinner than most lentil soups. From The New Laurel's Kitchen

Ingredients
  • 2 c. uncooked lentils
  • 8 c. water or vegetable stock
  • 1/2 onion, chopped
  • 1 small carrot, chopped
  • 1 celery stalk , chopped
  • 1 small potato, chopped
  • 2 T. olive oil
  • 2 bay leaves
  • 1 1/2 to 2 tsp. salt
  • 2 t. red wine vinegar

Directions
  1. Pick over lentils and wash.
  2. Mix all ingredients except the vinegar in a soup pot and cook until the lentils are very soft, about one hour.
  3. Stir in the vinegar at the end and serve.

This sounds great! We're finally having soup weather here in TX, so I'll give it a try. I don't think I've ever made lentil soup.
