Greek Lentil Soup

                    - 2 c. uncooked lentils shopping list
- 8 c. water or vegetable stock shopping list
- 1/2 onion, chopped shopping list
- 1 small carrot, chopped shopping list
- 1 celery stalk , chopped shopping list
- 1 small potato, chopped shopping list
- 2 T. olive oil shopping list
- 2 bay leaves shopping list
- 1 1/2 to 2 tsp. salt shopping list
- 2 t. red wine vinegar shopping list
How to make it 
                    - Pick over lentils and wash.
- Mix all ingredients except the vinegar in a soup pot and cook until the lentils are very soft, about one hour.
- Stir in the vinegar at the end and serve.
