Susans Spanish Rice Recipe
This is a casserole recipe a friend gave me back in the 70's. I've not made it in years but just came across the recipe. I used to make it on winter nights with a big salad. I always felt cozy while this was simmering.

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion - minced
  • 1 1-lb. can tomatoes
  • 1 8-ounce can of tomato sauce
  • 1 green pepper, chopped
  • 1 stalk celery, chopped
  • 1 tsp. salt
  • pepper to taste
  • 1 cup rice, uncooked

Directions
  1. In a 10" skillet brown the meat and onion.
  2. Drain the fat.
  3. Add the remaining ingredients and stir, cover, and simmer for 20 - 30 minutes, until the liquid is absorbed.

Sounds like a tasty, hearty one pot dinner. Just need some cheese on top and some tortilla chips to use as a spoon! = )
