How to make it

  • Heat grill or pan to medium high heat. Trim the stems from the mushrooms.
  • Slice the eggplant, yellow squash, and zucchini into 1/4 inch round slices,
  • Then brush the vegetables with canola oil, and sprinkle salt and pepper on both sides. grill until softened and grill marks have formed. It takes about 10 minutes on each side. ( brush with oil as needed to prevent sticking)
  • Then transfer to a baking pan. Heat broiler to low
  • Split the buns and brush the tops with the sesame oil. Sprinkle with with sesame seeds.
  • Layer the squash, zucichini, eggplant, and mushroom on the bottom of the bun halves.
  • Top each with a slice of cheeseand broil until the cheese melts about 1 minute.
  • Top remaining bun top and serve hot.
