Ingredients
  • 1 1lb. pork tenderloin
  • 1/2c dried figs,chopped
  • 1/2c crumbled blue cheese
  • 1/2t. salt
  • 1/2t. pepper
  • cooking spray
  • 1T apple jelly melted

Directions
  1. Slice tenderloin horizontally almost thru,should open like a book.
  2. Put between 2 sheets of plastic wrap and pound to 1/2" thickness
  3. Remove wrap and slide twine under meat at 1 to 2" intervals.
  4. Sprinkle or spread thick layer of filling evenly on meat leaving 1" border along the edges.
  5. Start at long side and roll meat up jelly roll style tucking filling as you go. Secure with twine and bake at 450 till thermometer reaches 165 about 20 mins.Spread jelly on meat and cook additional 5 mins
  6. Note: Can use cranberries and chevre or apricots and brie(suit your palate).

This sounds really good. I love to stuff chicken and pork and this will be just great. I am kicking myself because I make a menu for the whole month and then go shopping and I just went this week darn it. Definitly going to be on my list for next month.
