Hearty Healthy Orange Wheat Breakfast Muffins

- 2 cups whole-wheat flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/4 teaspoon salt, if desired shopping list
- 1 egg beaten shopping list
- 1/4 cup vegetable oil shopping list
- 1-1/2 cups orange juice shopping list
- 1/2 cup raisins shopping list
- NOTE: These are wonderful also for "breakfast on the go" shopping list
How to make it
- In large bowl, combine flour, baking powder, baking soda, salt
- In small bowl, combine egg, oil, orange juice, whisk to blend
- Add this mixture to dry mixture
- Stir until just moistened
- Mix in raisins
- Divide batter among 12 greased muffin cups
- Bake at 400 for 20 minutes

Very good and easy to tweak a bit and add a little different spin sometimes for variety. Thank you so much for sharing. I did these with apple juice one day and I have added nuts, seeds and fruit. Versatile or perfect as is. Wonderful contribution.
