Ingredients
  • 2 Tbs olive oil
  • 1 whole boneless chicken breast, cubed
  • 3 cups water
  • 2 (8 ounces) boxes Goya yellow rice
  • 1/4- 1/2 cup pimento stuffed olives, coarsely chopped
  • 1/4- 1/2 cup sliced canned carrots (or frozen, diced), chopped
  • 1/4- 1/2 cup canned potatoes (or leftover, cubed), coarsely chopped
  • 1/4- 1/2 cup frozen (or canned) peas

Directions
  1. In a large skillet, heat oil.
  2. Add chicken, and saute until slightly browned, about 5 minutes.
  3. Add 3 cups water, bring to a boil.
  4. Stir in rice mixes, cover tightly, and reduce heat to simmer.
  5. Cook 25 minutes.
  6. After 25 minutes, stir in remaining ingredients, just until they are heated through.
