Banana Cookies Recipe

Ingredients
  • 3 ripe bananas smashed
  • 1 c. dried fruit (raisins or cranberries)
  • 2 c. quinoa flakes
  • 1/4 c. oil
  • 1 t. vanilla
  • pinch of salt

Directions
  1. Preheat oven to 350.
  2. Mix all ingredients and let sit for 15 minutes.
  3. Place squashed spoonfuls on an ungreased cookie sheet.
  4. Bake for 15-20 minutes.
  5. Great for freezing!

I have a question. What are quinoa flakes?


They're generally found at stores like Whole Foods and come in a box. You can cook them as you would instant oatmeal, or use them in recipes. Quinoa itself is an alternative grain (like millet, amarynth, etc.) for people who avoid rice/wheat or want something different. It's VERY nutritious and versatile! :)


I've had similar cookies made with oats - these sound delicious and healthy - thanks! I might add 1/2c chopped walnuts to these...
