Good-for-You Banana Bread Recipe
This version is more dense than regular banana breads. Toast the slices and spread a little peanut butter, jam or cream cheese on them! Yum!

Ingredients
  • 2 cups whole wheat flour
  • 1 tbsp wheat germ
  • 1 tsp baking soda
  • 1/2 tsp salt (I omit the salt)
  • 1 whole egg
  • 2 egg whites
  • 2 cups ripe bananas
  • 1/4 - 1/2 cup brown sugar (use more if you like it sweet)
  • 1/4 cup unsweetened, plain applesauce (this replaces the fat in the recipe)
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla or cinnamon (depends on your preference)

Directions
  1. Pre-heat oven to 350ºF
  2. Stir together the flour, wheat germ, baking soda and salt into a large bowl.
  3. In a separate bowl or food processor, blend whole egg, egg whites, bananas, brown sugar, applesauce, lemon juice and vanilla or cinnamon.
  4. Pour this over the flour mixture and stir until just blended
  5. Pour into a greased & floured loaf pan.
  6. Bake for 45 minutes or until sides pull away from the pan.
  7. Cool on rack then remove from pan.

Another great recipe would like to try it but don't know what the wheat germ is.


Wheat germ in the middle part of the wheat (like the seed of it). You can use bran ("pitouro")in place or just leave it out.


Pitoura den trone mono oi kotes??


Pitoura is not for chickens??


That's the closest I could come to the Greek word! Pitoura is probably not the right word to describe this type of bran, but it probably tastes the same!
