Good-for-You Banana Bread

- 2 cups whole wheat flour shopping list
- 1 tbsp wheat germ shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt (I omit the salt) shopping list
- 1 whole egg shopping list
- 2 egg whites shopping list
- 2 cups ripe bananas shopping list
- 1/4 - 1/2 cup brown sugar (use more if you like it sweet) shopping list
- 1/4 cup unsweetened, plain applesauce (this replaces the fat in the recipe) shopping list
- 1 tbsp lemon juice shopping list
- 1/2 tsp vanilla or cinnamon (depends on your preference) shopping list
How to make it
- Pre-heat oven to 350ºF
- Stir together the flour, wheat germ, baking soda and salt into a large bowl.
- In a separate bowl or food processor, blend whole egg, egg whites, bananas, brown sugar, applesauce, lemon juice and vanilla or cinnamon.
- Pour this over the flour mixture and stir until just blended
- Pour into a greased & floured loaf pan.
- Bake for 45 minutes or until sides pull away from the pan.
- Cool on rack then remove from pan.
