How to make it

  • Pre-heat oven to 350ºF
  • Stir together the flour, wheat germ, baking soda and salt into a large bowl.
  • In a separate bowl or food processor, blend whole egg, egg whites, bananas, brown sugar, applesauce, lemon juice and vanilla or cinnamon.
  • Pour this over the flour mixture and stir until just blended
  • Pour into a greased & floured loaf pan.
  • Bake for 45 minutes or until sides pull away from the pan.
  • Cool on rack then remove from pan.

    That's the closest I could come to the Greek word! Pitoura is probably not the right word to describe this type of bran, but it probably tastes the same!

    Wheat germ in the middle part of the wheat (like the seed of it). You can use bran ("pitouro")in place or just leave it out.
