These pancakes are delicious and don't taste "weird". They can be made vegan/lactose free, and eaten with syrup or nutella or peanut butter.

Ingredients
  • 1 c rice flour
  • 2 t baking powder
  • 1/2 t salt
  • 1 T sugar
  • a pinch of nutmeg and a bigger pinch of cinnamon
  • 1 T veg oil
  • 1 c milk or soymilk or water
  • 1 overripe banana

Directions
  1. Mix all the dry ingredients.
  2. Mash the banana with the milk and oil, then add to flour mix.
  3. Stir well to combine, and let sit about 5 minutes while you heat up your griddle (or cast iron pan, or pan, or whatever).
  4. Cook as you would pancakes, dropping about 1/4 c at a time and wiggling the pan to spread.
  5. Cook on each side, then spread with Nutella (or peanut butter, or syrup, or anything) and eat hot.

Hi Jillelise,

I made these pancakes for breakfast today and my family liked them. I did change them up a bit. I used my own gluten free flour mix and I added a 1/4 tsp of xanthan gum. I did find that I needed to oil my pancake griddle. Gluten free flours seem to be quite sticky.
I will be making these again.
