Ingredients
  • 6 each potatoes; peeled, cut-up
  • 4 cups water; enough to cover
  • 1 teaspoon salt
  • 1/2 teaspoon fine ground white pepper
  • 4 tablespoons butter
  • 1/2 cup cream

Directions
  1. Peel potatoes and cut into 1-1/2-inch cubes. Put into water to cover and gently boil for 15 minutes.
  2. When potatoes are cooked through, drain off all the cooking liquid. Discard cooking liquid or use for stock and return potatoes to pan.
  3. Add salt, pepper, and butter and mash potatoes with an up-and-down motion with a masher.
  4. Try not to use a stirring action since potatoes have gluten, which, if developed, may become tough and rubbery.
  5. Add cream and continue mashing only until potatoes are light and fluffy.
