Traditional Mashed Potatoes

- 6 each potatoes; peeled, cut-up shopping list
- 4 cups water; enough to cover shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon fine ground white pepper shopping list
- 4 tablespoons butter shopping list
- 1/2 cup cream shopping list
How to make it
- Peel potatoes and cut into 1-1/2-inch cubes. Put into water to cover and gently boil for 15 minutes.
- When potatoes are cooked through, drain off all the cooking liquid. Discard cooking liquid or use for stock and return potatoes to pan.
- Add salt, pepper, and butter and mash potatoes with an up-and-down motion with a masher.
- Try not to use a stirring action since potatoes have gluten, which, if developed, may become tough and rubbery.
- Add cream and continue mashing only until potatoes are light and fluffy.
