How to make it

  • Peel potatoes and cut into 1-1/2-inch cubes. Put into water to cover and gently boil for 15 minutes.
  • When potatoes are cooked through, drain off all the cooking liquid. Discard cooking liquid or use for stock and return potatoes to pan.
  • Add salt, pepper, and butter and mash potatoes with an up-and-down motion with a masher.
  • Try not to use a stirring action since potatoes have gluten, which, if developed, may become tough and rubbery.
  • Add cream and continue mashing only until potatoes are light and fluffy.
