This is a tasty autumn dish when acorns are fresh from the farmers fields.

Ingredients
  • 1 medium acorn squash
  • 6 ounces bulk pork sausage
  • 1 celery rib, chopped
  • 1/2 onion, chopped
  • 1 tart apple peeled and chopped
  • 1 teaspoon all-purpose flour
  • 1 egg, lightly beaten
  • 1/4 cup sour cream
  • 1/8 teaspoon salt
  • 1/3 cup diced process cheese (Velveeta)

Directions
  1. Cut squash in half.
  2. Remove seeds.
  3. Place cut side down in a greased 13 x 9 inch baking dish.
  4. Cover and bake at 350 degrees for 30-35 minutes or until tender. Meanwhile, in a small skillet, cook the sausage, celery if desired and onion over medium heat until meat is no longer pink.
  5. Add apple.
  6. Cook and stir for 3 minutes.
  7. Drain.
  8. In a bowl, combine the flour, egg and sour cream until smooth.
  9. Stir into sausage mixture.
  10. Turn squash over; sprinkle cut sides with salt.
  11. Stuff with sausage mixture.
  12. Bake, uncovered, for 15 to 20 minutes or until heated through. Sprinkle with cheese.
  13. Bake 5 minutes longer or until cheese is melted.
