Waldorf Salad Recipe
Invented by the maitre d'hotel of the Waldorf Astoria hotel in New York in the early 1900's. The original recipe did not include walnuts but now they have become an indispensable ingredient.

Ingredients
  • 3 large firm ripe apples, cored and cut into 1/2 inch pieces (about 4 cups)
  • 2 tbsp. fresh lemon juice
  • 3 medium-sized celery stalks, trimmed and cut into 1/4 inch dice (about 2 cups)
  • 1 cup coarsely chopped walnuts
  • 1 cup good quality mayonnaise (not Miracle Whip)
  • 1/2 cup heavy cream
  • 1 or 2 heads Boston or Bibb lettuce, separated into leaves, washed, patted dry and chilled

Directions
  1. Combine the apples and lemon juice in a deep bowl and turn the apple pieces about gently with a spoon to moisten them evenly.
  2. Stir in the celery and walnuts.
  3. Then, in another bowl, mix the mayonnaise and cream and, when the mixture is smooth, pour it over the apples.
  4. Toss all the ingredients together gently but thoroughly.
  5. Shape the lettuce leaves into cups on 6 chilled individual serving plates.
  6. Mound the Waldorf salad in the cups, dividing evenly among them. Serve immediatly.
