The head chef at my restaurant made this for me for dinner last night and it was PHENOMINAL I just had to post it. Note: He was just throwing stuff into a pan, he did not make it from a recipe. This is just was I came up with from watching him.

Ingredients
  • 8 oz. Precooked spaghetti
  • 2 Tbsp Olive Oil
  • 1 Tsp Lemon Zest
  • 1 Tbsp Lemon Juice
  • 1/2 Tsp salt
  • 1/4 Tsp Pepper
  • 1 Tbsp Garlic, Chopped
  • 3 Tbsp red onion, chopped
  • 10 raw tiger shrimp, shelled and devained
  • 2 Tbsp Parsely chopped
  • 2 handfuls arugula
  • pinch of hot pepper flakes
  • handful of chopped green onions

Directions
  1. Coat a sautee pan with a drizzle of olive oil and toss in red onions and cook for about 1 minute
  2. while onions are sauteeing zest lemon into the 2 tbsp of olive oil
  3. add shrimp, lemon juice, garlic and red pepper flakes, salt, and pepper to pan
  4. when shrimp is cooked through (about 1-2 minues per side) add cooked spaghetti and arugula
  5. add the olive oil and lemon zest mixture
  6. sautee untill everything is hot and arugula is wilted
  7. divide between 2 plates and garnish with parsely and gren onions
