Coconut Orange Cupcakes

A wonderful recipe from Taste of Home Magazine. A great flavor combination of coconut, orange and white chocolate in a cupcake. what else can a girl ask for?
Ingredients
- CUPCAKES: shopping list
- 1 cup sugar shopping list
- 2/3 cups vegetable oil shopping list
- 2 eggs shopping list
- 1 cup orange juice shopping list
- 3 cups all-purpose flour shopping list
- 1 TBSP baking powder shopping list
- 1 tsp baking soda shopping list
- 3/4 tsp salt shopping list
- 1 can (11 ounces) mandarin oranges, drained shopping list
- 1 cup White chips shopping list
- TOPPING: shopping list
- 1 cup flaked coconut shopping list
- 1/3 cup sugar shopping list
- 2 TBSP butter, melted shopping list
How to make it
- In a mixing bowl, combine the sugar, oil, eggs and orange juice. Mix well.
- Combine the dry ingredients and stir into orange juice mixture just until moistened.
- Fold in oranges and chips
- Fill greased or paper-lined muffin cups two thirds full.
- Combine topping ingredients. Sprinkle over cupcakes
- Bake at 375 for 15-20 minutes or until golden brown.
